I used to think you had to wait days, sometimes weeks, before you could enjoy a good batch of pickled cucumbers. Then I started making them this way and now I can have a bowl of crisp, garlicky, herby cucumbers ready in just three hours. No canning, no vinegar, no fuss. Just a handful of simple ingredients and a little patience. These go with everything in my house, alongside grilled meat, piled next to roasted potatoes, or tossed into a salad.

- 2 lbs cucumbers
- 10 garlic cloves
- 1 bunch fresh dill
- 1 tablespoon salt
- 1½ tablespoons sugar
- juice of 1 lemon (about 3 tablespoons)
- ⅓ teaspoon black pepper
Slice the cucumbers into thin rounds and add them to a large bowl. Finely mince the garlic and chop the dill, then add both to the cucumbers. Sprinkle in the salt, sugar, and black pepper, then pour the lemon juice over everything. Toss it all together really well so every slice gets coated.
Cover the bowl and let it sit at room temperature for 3 hours. That’s the whole thing. The lemon juice does the work of vinegar here, gently softening and seasoning the cucumbers while keeping them crisp and bright.
One thing I like to do for a little extra flavor: toss in a few sprigs of fresh cilantro along with the dill, and add a small pinch of ground coriander or chili flakes with the black pepper. It gives the whole bowl a subtle, slightly exotic warmth that makes people ask what your secret is.
After three hours they’re ready to serve, and they keep beautifully in the fridge for several days, just getting a little more flavorful each day.
