If I’ve got ground beef and potatoes in the house, I already know what’s for dinner. This is my absolute favorite one-skillet meal, the kind that saves me on busy weeknights when I don’t have the energy for anything complicated. Everything cooks in one pan, the potatoes turn soft and creamy in a rich garlicky sauce, and melty cheese pulls it all together. My family cleans their plates every single time.
- 1 lb ground beef
- 3 to 4 potatoes
- 1 onion
- 2 garlic cloves
- 1 cup heavy cream
- 3 tablespoons chicken broth
- 6 oz shredded mozzarella or cheddar
- 1 tablespoon oil
- salt and black pepper to taste

Heat a skillet, add the oil, and drop in the ground beef. Break it up with a spatula, mash out any clumps, and season it with salt and black pepper. Brown it well until it develops a nice golden crust. Don’t rush this part, because that’s exactly where the deeper, richer flavor comes from. While the beef browns, finely dice the onion, add it to the pan, and cook for a few more minutes until it softens. Crush the garlic cloves with the flat of your knife, mince them, and stir them in. Cook for about 30 seconds, just until the garlic smells fragrant but before it can burn.

Slice the potatoes into thin rounds. Once the beef is nicely browned, layer the potato slices right on top, season with a little more salt and pepper, then pour in the heavy cream. Then carefully stir again, bringing the bottom layers of potato up to the top so everything cooks evenly and nothing sticks or scorches. Cover it back up and let it go another 20 minutes on low heat.

Once the potatoes are soft, tender, and juicy, sprinkle the shredded cheese over the top, cover again, and let it sit just until the cheese is completely melted. Meanwhile, chop up some fresh parsley. Take the skillet off the heat and serve it hot. The potatoes come out soft and creamy, the beef is juicy, the sauce is thick and rich, and that melted cheese ties every flavor together. It’s the kind of cozy, filling, homestyle dinner that never disappoints.
