I couldn’t believe this honey cake needs no oven, and the ice-cream-style filling is unreal

I was genuinely skeptical when I first heard about a no-bake honey cake. No oven, no rolled-out layers, no fuss? But I tried it anyway, and now I can’t stop making it. Instead of baked cake layers, you use a sweet honey-chocolate crumb, and between the layers goes this light sour cream filling made with sweetened condensed milk that tastes exactly like vanilla ice cream. The crumb soaks up the cream as it chills and the whole thing turns soft, tender, and completely irresistible. Nobody ever guesses it never saw the inside of an oven.

For the honey crumb:

  • 10.5 oz plain unseasoned breadcrumbs (about 3 cups)
  • 3 to 4 tablespoons honey
  • 5 tablespoons unsalted butter
  • 2 tablespoons cocoa powder

For the ice cream filling:

  • 1¼ cups sour cream
  • ⅔ cup sweetened condensed milk
  • 1 packet unflavored gelatin (about 2½ tsp), or a little more for a firmer set
  • 3 tablespoons cold water

For the chocolate glaze:

  • 1 oz dark or milk chocolate
  • 2 teaspoons milk
  • 1 teaspoon flavorless oil

Start by sprinkling the gelatin over the 3 tablespoons of cold water. Stir it and let it bloom for the time listed on the package. You can adjust the amount to your liking. One packet gives a softer, more delicate cake, while a bit more makes it firmer and better at holding its shape. If you skip the gelatin entirely, the cake comes out very soft and soaks up even more cream.

For the crumb, melt the butter in the microwave or over low heat, then stir in the honey until smooth. In a bowl, mix the breadcrumbs with the cocoa powder. Pour in the warm honey butter and rub everything together with your hands until you have an evenly moistened crumb.

Set a 6-inch springform pan on the plate you plan to serve the cake on. Lightly oil the inside of the ring and line it with a strip of parchment. Press a layer of crumb about ⅓ inch thick into the bottom, packing it down firmly with the bottom of a glass. Put the pan and the leftover crumb in the fridge.

For the filling, whisk the cold sour cream together with the condensed milk until smooth and creamy. It should taste just like vanilla ice cream. Gently warm the bloomed gelatin until it’s fully dissolved, but never let it boil. Stir a spoonful of the sour cream mixture into the gelatin first, mix well, then pour that back into the rest of the cream in a thin stream while stirring. Pop the cream in the fridge for 5 to 7 minutes to thicken slightly, but don’t leave it too long or it’ll be hard to spread.

To assemble, spread 2 to 3 tablespoons of cream over the chilled crumb base and smooth it out. Sprinkle a thin layer of the honey crumb over it and press gently. Keep alternating cream and crumb until you run out, finishing with a layer of crumb on top.

Cover the pan with plastic wrap and refrigerate for at least 3 hours, though overnight is best. The layers stabilize and the crumb soaks up all that lovely cream.

For the glaze, break the chocolate into small pieces, add the milk and oil, and melt in short bursts in the microwave or over a water bath, stirring each time. Pour it over the chilled cake and return it to the fridge for another 15 minutes. Once the chocolate sets, carefully remove the ring and the parchment.

The finished cake is tender, creamy, and wonderfully fragrant. Nobody believes it was made without an oven or any real cake layers at all.
