When you want something light, creamy, and genuinely delicious without any fuss, this no-bake strawberry cheesecake dessert is the one to make. It wins everyone over from the very first bite with its airy texture, fresh berry flavor, and how simple it is to put together. It’s no wonder that in a lot of families these no-oven treats end up being the most requested of all.
At my house the kids ask for this instead of store-bought ice cream, so I always make a big batch because it disappears within a day anyway. No cups and cups of sugar, no mysterious additives, just cheese, strawberries, and a few good little extras. Here’s how I make it.
- 1.5 lbs farmer’s cheese or whole-milk ricotta, 5 to 9% fat
- 1½ cups sour cream
- 1 can sweetened condensed milk (about 1 cup)
- 1/2 cup plus 2 tablespoons nonfat dry milk powder
- 1.75 lbs fresh strawberries
- 3 tablespoons chia seeds
- 1 tablespoon vanilla extract
- 4 tablespoons unflavored gelatin (about 4 packets)
- 2/3 cup water
Stir the gelatin together with the water and let it sit for 10 to 15 minutes to bloom. While that happens, combine the farmer’s cheese with the sour cream and condensed milk, and for extra creaminess add the dry milk powder.
Blend everything well with an immersion blender until smooth and creamy. Stir in the chia seeds and vanilla.
Melt the bloomed gelatin gently in a small saucepan, over a water bath, or in the microwave. Add a couple of spoonfuls of the cheese mixture to the warm gelatin, stir it together, then pour all of it back into the main bowl and mix well. Tempering it this way means the gelatin spreads evenly without seizing into little lumps.
Cut the strawberries into small pieces, fold them into the cheese mixture, and stir. Line your molds with plastic wrap, leaving plenty of overhang on the edges, and fill them with the mixture.
Cover the top with the overhanging plastic wrap and refrigerate for 12 hours. Once it’s fully set, lift it out of the mold, peel off the plastic, and it’s ready to serve.
